Cherry, Beet and Coconut Smoothie

I have a client and a very good friend, a wonderful woman, super intelligent, beautiful hair and a kick-ass woman in general.

My friend has a low functioning thyroid and has been diagnosed with Hashimotos disease. Hashimoto’s disease affects thyroid function but is in fact an autoimmune disease where the antibodies of the body are attacking the thyroid gland.

I always have my friend in mind whenever I recommend one of my favourite healthy practices, a big green smoothie everyday. Cruciferous vegetables contain goitrogens which can slow the function of the thyroid gland further and are not recommended where there is a diagnosis of Hashimotos disease. My good friend cannot future her body with all he nutrition in a green smoothie daily.
I have devised this Cherry, Beet and Coconut Smoothie just for my friend!

It is a beautiful pink colour and packed with vitamin C from the cherries. It is also supportive of liver function as it contains beets and this means clearer skin and fewer menopausal symptoms. There is lots of healthy fibre in this smoothie to carry excess peri-menopausal hormones from the body and a big tablespoon of satiating coconut oil.
Lucky for my good friend, coconut oil can be very supportive of the thyroid gland, as the medium chain fatty acids in the oil support thyroid function. Medium chain fatty acids increase metabolism, increase you basal body temperature and can increase energy levels, essentially helping with the work that the thyroid gland does in the body.
50% of the medium chain fatty acids in coconut oil consist of  lauric acid an essential acid that helps to build and support the immune system. Perfect if you are suffering from symptoms of an auto-immune disease.

Fruity and creamy, this smoothie is a perfect alternative to a green smoothie if you are avoiding cruciferous vegetables.

Ingredients
  1. 1 cup frozen cherries or fresh cherries stoned
  2. 1 orange peeled
  3. 1 large beet washed and chopped
  4. 2 tbsp hemp seeds
  5. 1 tbsp coconut oil melted
  6. 1/4-1/2 tsp Spirulina powder
  7. 1 cup filtered water
Instructions
  1. Blend all of the ingredients in a high powered blender apart from the coconut oil until smooth.
  2. Pour in the melted coconut oil while the blender is running to get a creamy fruity smoothie.
