Broccoli Salad With Tahini Dressing

Look at the colours in the salad!

If your goal is to eat the rainbow then this salad falls into your menu plan. Full of colour on the plate this salad bursts with flavour too; crunchy broccoli, combines with the sweet tang of red pepper and fruit pops of red grape all wrapped up in a creamy tahini dressing.

Perhaps the real super power in this salad is in the amount of calcium that it delivers to your diet. 

We are all so conditioned to believe that we have to rely on milk products and dairy for strong bones and teeth as we age but in fact leafy greens and other green vegetables such as broccoli are packed with bioavailable calcium….this means that it it easier for your body to absorb calcium from greens than it will be from dairy.

The calcium content of this salad is then amped up as the dressing is made with tahini or sesame paste. Sesame seeds are very mineral rich and one of the best dietary sources of bone building calcium, magnesium, the relaxation mineral, immune boosting zinc and copper.  Copper plays am important role in the production of collagen and elastin in the body and so contributes to fantastic looking skin as well as strong and elastic blood vessels, bones and joints.

I consider sesame seeds a super-food for the peri and post menopausal woman because of their high mineral content and subsequent impact on skin, bone density, and joint health. I look for ways to incorporate them into the diet regularly and toss tahini into hummus and salad dressings, sprinkle raw sesame seeds over stir fry dishes and into salads and often mix sesame seeds into my  Super Nutrition Nut and Seed Mix.

But there is more…..This salad is packed with vitamin C with red peppers containing more vitamin C than citrus fruits and grapes and broccoli both contributing to the anti-inflammatory, anti-oxidant and youthful skin boosting vitamin C.

You get the picture. This salad is great for strong bones and teeth. It is going to boost your collagen and elastin levels and give you great looking skin and will help to bring down 

Broccoli Salad With Tahini Dressing

A fresh vegetable salad with a dairy free creamy dressing.

Ingredients
  1. For The Salad
  2. 1 head broccoli broken into florets
  3. 1 red pepper diced
  4. 1 cup seedless red grapes
  5. For The Dressing
  6. 1/3 cup tahini sesame paste
  7. 1/3 cup filtered water
  8. 1 lemon juiced
  9. 1 tsp local raw honey
  10. 1 clove garlic minced
Instructions
  1. Plunge the broccoli florets into boiling water for 10 minutes or just until they are al dente
  2. Place the diced red pepper and halved grapes into a large bowl
  3. Drain the broccoli and add to the bowl.
  4. In a used jam jar add all the dressing ingredients
  5. Shake vigorously or use a small whisk to combine
  6. pour the dressing onto the vegetables and use the hands to combine into the salad.
