Pomegranate and Ginger Mocktail

Now you might not want to be drinking alcohol all through the holiday period, you might be driving, be pregnant or just want to give your liver a break!

Here is a beautiful and refreshing cocktail to mix up and enjoy that will support your body with a big dose of vitamin C and anti-oxidant rich pomegranate and lime. Hints of ginger warm the cockles of your heart and fire up the metabolism.

IMG_4162You will need a good blender such as a Vitamix or Nutribullet for this recipe as those pomegranate seeds can be tough. Otherwise you can strain your juices into a glass after blending. A good blender ensures that you enjoy all the fibre and beneficial nutrition from the seeds.

IMG_4165One teaspoon of coconut sugar takes the citrussy edge off this cocktail and unlike refined white sugar, coconut sugar retains it’s rich mineral nutrition including calcium, iron, potassium and immunity supporting zinc.

IMG_4171The gorgeous colour is the most wonderful art of this Christmas cocktail. It really is a joy on the tongue and in the glass.

Ingredients
  1. 1/2 cup pomegranate seeds
  2. 1/2 inch fresh ginger
  3. 1 lime juiced
  4. 1/4 cup water
  5. 1 tsp coconut sugar
  6. club soda or sparkling lime flavoured water (I used Perrier)
Instructions
  1. Blend the pomegranate seeds, ginger, lime juice, coconut sugar and water until very smooth
  2. Strain if necessary into a glass
  3. Add club soda or sparkling flavoured water to taste
