Watermelon and Mint Aqua Fresca

It has been super HOT here in Calgary Alberta and hot is not our natural state. We try never to complain about the high temperatures of summer as we have usually only very recently left behind the cold temperatures we endure through the winter and we are more than likely to experience snow and hail during July and August.

However when you do not have air conditioning, the days where temperatures rise above +30C can be difficult to endure.

It was on one such day that I started experimenting with watermelon I had in the refrigerator and chopped half of it into my blender. I was craving an ice cold fruit drink that would liven up the palate but I do not drink sugar laden, magnesium depleting soda or pop.

We have mint in the garden and this herb is perfect for adding that refreshing mojito zing to a beverage, so I added the leaves of two large sprigs.

No added sugar, rich in lycopene for cardiovascular health and high in anti-oxidant vitamin C, we drank this delicious and beautifully refreshing Watermelon Aqua Fresca sat in the garden on an evening where temperatures were still in the high 20C even as the sun went down. It was the perfect end to a hot and gorgeous day.

 

Watermelon and Mint Aqua Fresca

Ingredients
  1. 1/2 Organic seedless watermelon
  2. 2 large sprigs fresh mint
Instructions
  1. Chop the watermelon into cubes and place in a blender with the leaves from the mint sprigs
  2. Blend on high until smooth
  3. Pass through a sieve into a large jug
  4. Refrigerate until icy cool.
